We mustn't think of sin as a list of things we do or don't do. We really mustn't because that makes our faith just the same as Judaism and puts us under a new Law.
Sin is turning the will from God.
So if we are in confession and choose not to confess something that the Holy Spirit is convicting us about then we are turning our will from God and it is sin. But if we have spent a fruitful half an hour with our priest and tried to deal with the things that are on our hearts then having not confessed something that we later recall is a different matter altogether.
What is God asking of you? What is God asking of me? If we turn away from God's will for us and choose our own way then we sin.

If you know that God wants you to confess something then embrace His will for you, His good and perfect will, and confess it and be set free from it.
