Knowing that there are Spiritual Competitions all over the Coptic World. I would like to know just out of curiosity the curriculums for the high schools.

Well here in the diocese of southern CA we have it on lacopts.org
Basically
Bible: 1st Epistle of St John with commentary by st Augustine
History: History of apostles and early church by abouna Malaty
Hymns: ten theno, 1st and 2nd hoos, khen oushot, and marnhos (all tasbeha)
